Ingredients: Spanish Stuffed Potatoes with Tuna and Cheese
4 large potatoes
1 can of tuna (drained)
100 g of shredded cheese (cheddar or mozzarella)
2 tablespoons of mayonnaise
1/2 small onion (finely chopped)
2 cloves of garlic (finely chopped)
2 teaspoons of vegetable oil
Salt and pepper to taste
Fresh parsley for garnish (optional)
Instructions:
Preheat your oven to 200°C (390°F).
Coat the potatoes lightly with olive oil and season generously with salt.
Arrange the potatoes on a baking tray and cook them in the oven for 45-60 minutes, or until a fork easily pierces through the center.
As the potatoes bake, warm the olive oil in a pan over medium heat.
Add the finely chopped onion and garlic, cooking until softened and releasing a pleasant aroma.
In a mixing bowl, combine the sautéed onion and garlic with the drained tuna, mayonnaise, and shredded cheese. Season with salt and pepper.
After the potatoes are done, take them out of the oven and allow them to cool for a few minutes. Cut each potato in half and carefully scoop out the center, leaving a thin layer of potato flesh inside the skins.
Mix the scooped-out potato with the tuna and cheese mixture, then stuff each potato half with the filling.
Place the stuffed potatoes back in the oven for 10-15 minutes, until the cheese is melted and bubbly.
